One thing about most vacations is physically, you're usually 10X more active than the typical day at work.  I'm not burning a damn thing sitting here talking on the phone and typing on the X.  When I go to the beach, I always maintain my workouts but heading down to the beach, carrying chairs, coolers etc. then any activities you may do are burning some serious calories.  Yeah, you offset it with more food and a couple of too many adult beverages...but it's a good trade-off.

I've got one of those ring frisbees.  Can't recall the name but it's been thrown 1/4 mile. (Not by me...it says it on the frisbee) That thing will cut through any wind and fly forever.  Where we always stay at the beach, there's a huge open area about 300 yards from where we access the beach.  No one sets up camp down there so we always go down there and throw the frisbee.  What an incredible workout running in the sand.  Love that thing.

Two healthy recipes I've enjoyed:

Chickpea and Cucumber Salad:

Two cans of chickpeas (reduced salt) drained and rinsed
1 large cucumber, shaved with a mandolin or sliced thin
1/2 of a shallot - you can add more, but raw onions bother my stomach
1/2 cup basil, chopped
1/2 cup feta cheese
4 tablespoons olive oil
4 teaspoons red wine vinegar
salt
pepper

Mix everything.  Let sit in the fridge for a little while or eat right away. 

Turkey Burgers:

1 lb ground turkey
1 cup cilantro
1 shallot
1 tsp cumin
1/2 lime
salt pepper

Puree the cilantro, shallot, cumin, and lime juice.  Mix into turkey meat and form into patties.  Salt and pepper the outside of each side.  Grill til done. 

Turkey Burger Mayo:

1/2 cup of reduced fat sour cream
1/2 cup of cilantro, chopped
1/8 cup of dijon mustard
Juice from one lime
2 tablespoons of olive oil

Mix all ingredients. 

Eat on a bun or without.  I topped mine with pepper jack cheese, avocado, and raw spinach.

Let's keep this rolling:

Down to 164 pounds.

New recipe:

1 can of sardines in water
1 avocado
1/2 cup cilantro
1.5 teaspoons of red wine vinegar
1 tablespoon of olive oil, plus more for drizzling
Salt
Pepper
A scant cup of arugula

1 100 calorie bagel thin

Chop sardines, avocado, and cilantro together.  Dress with vinegar, olive oil, salt and pepper.  Spoon onto toasted bagel thin.  Top with arugula.  Drizzle a little olive oil over the top.  Eat.

You'd be surprised to know how healthy sardines are.
