My friend invited me over for tacos a few weeks ago.  Ground beef.  Hard shells.  Iceberg lettuce.  Cheddar cheese.

Here's what I would serve him (and what I'm eating tonight)

4 limes
4 garlic cloves
1 cup of cilantro
4 green onions
2 serrano peppers
1/2 cup canola oil

2 lbs skirt steak

4 poblano peppers
1 large white onion, sliced

2 avocados
Sour Cream

flour tortillas

Combine first six ingredients in a food processor and process until smooth.

Marinate skirt steak in mixture for two hours.

Char poblanos on grill, let cool, and peel.  Slice the poblanos the same size as the onion.

Caramelize the onions in a pan and add poblanos.  Keep warm.

Use a paper towel to dry the steak.  Let sit for thirty minutes. 

Grill the steak for about three minutes per side (rare).

Let steak rest for five minutes. 

Slice avocado.

Stuff poblanos, onions, avocado, and steak into a flour tortilla.

Eat.

Sounds most excellent.  I'd probably use flank steak for my personal tastes.   I will save that marinade to my recipes. 

I have one for flank/skirt steak that is more "red" and spicy that I will try and dig up and share.  When I had the wife and stepkids we used to do tacos on the grill.  Marinated flank steak, grilled onions, and peppers, cheese, avocado or homemade Guacamole and homemade Salsa.  Served roll your own with flour tortillas.

That sounds really good and I'm a taco fanatic, but I still prefer good old hard, fragile, make a mess all over yourself shells to the tortillas.  Just the kid in me.

I'm with this guy......hard corn shell = taco Tex-Mex purist.

The hard shell is more of an American twist.   I like them though.

Seriously though, I got news for you....a taco as we know it as a dish is an American twist. As is most "Mexican" food you eat.

Some tacos are traditional Mexican fair.  Tacos Lengua (beef tongue) and tacos de chapulinas (grasshoppers) are traditional Mexican cuisine.

Not the Mexican food I eat. 

One benefit of teaching ESL students is learning where to go for real ethnic cuisine.

Agree...but they are far and few. Most Mexican cuisine as we know it is mainly from the most upper Northern regions of Mexico like Juarez and even South Texas (El Paso, San Antonio and Corpus Christi). Had a couple of Mexicans that used to work for me explain the differences in regional food there. One guy was from Juarez and the other 2 were from Mex City. They pretty much all agreed our Mexican is really "Tex Mex" or "Northern Mexican" food. I like it all still the same. Anything spicy I am down with. And a good salsa.

Oh, and in these parts, you can find all the "real Mexican food" you can handle.  They eat everything but the Moo, the Oink, the Baaaah, and the Cluck.   

I'll stick with Tex Mex, cuz they don't eat no Tacos de ojo, or lingua, etc.  I do like soft and hard tacos, and usually get a mixed batch when I eat them.
