I just had Conecuh sausage for the first time the other day.  Amazing stuff.

Last night:

BBQ pork tacos
Spinach salad on the side

This morning:
1/2 cup of plain Greek yogurt
1/2 cup raw oatmeal
Craisins
Almonds
Drizzle of honey

Breakfast of champions.   :bar:

I have a relative that moved to California.  She gives a call every couple of months to ship her some Conecuh sausage and bacon.

I picked up 3 packages of Conecuh last night for this weekend's 4th festivities. One regular, one hickory, one hot. They will be good with the 2 racks of Ribs I have ready to cook, and the cooler full o'beer.....

I would say this weekend I will be  #winning

Tonight will be smoked Boudin, Atomic Buffalo Turds, Armadillo Eggs, potato salad, and mustard slaw.

Baked sweet potatoes (sliced thickly covered in olive oil and thyme)
Fresh, raw spinach

Let the steak and potatoes be the dressing.

Sounds good.  I have no clue what I will be eating tonight,  but after all the cooking, grilling/smoking that took place this weekend, a turkey w/pepper-jack on whole wheat with chips is sounding really good.

The vegetables were fresh from the local corner market.  I made a pig of myself when I finally got home at 10 last night.

Pan-seared Chilean Seabass wrapped in prosciutto
Polenta cakes
Oven roasted brussel sprouts

Had to drive all over town to find the fish but will def. be worth it!

That seems very busy.

It may seem busy, but it was delicious. 

Tonight:

Seafood gumbo with shrimp, crab, and oysters. 

Another excellent meal made that will provide another couple of meals.
